Description
Ovalett Special, is a sponge emulsifier compound in paste form. Compatible with "all in" production methods, it helps to extend softness and fresh keeping properties. This product is ideal for hi-ratio sponge applications; it is also suitable for hi-ratio cakes, as well as plain flour cakes and sponges.
Method:
-Place eggs, water and Ovalett Special in machine
bowl.
-Sieve together the dry ingredients and add.
-Blend on low speed.
-Scrape down.
-Whip on high speed for approx. 5 minutes, followed by 3 minutes on medium speed.
-Bake cates at 375o
-F for approx. 15 minutes.
-Bake sheets at 425o
-F for approx. 7 minutes.
Packing: Plastic Container Repacking from Halal Product Sponge emulsifier compound in paste form
Usage: 8% - 10% on total flour weight Keep well at ambient (30 ± 5° C) and dry condition
