•Steam fish maw for 15 mins and then soak overnight. Cut into pieces.
•Soak peach gum for 10 hours, clean impurities.
•Soak snow fungus for 1 hour, trim off hard yellow core and cut into smaller pieces.
•Soak the lotus seeds 30mins and remove bitter green piths.
•Halve the red dates and removes seeds.
•Place boiling water in pot. Add red dates, fish maw, lotus seeds and snow fungus and simmer for 40 mins.
•Add peach gum and simmer for further 10 mins.
•Finally add goji berries and rock sugar and simmer for 10 mins.
•Serve hot, chilled or with milk.
